Hamantashen Cookies
 
2 sticks of softened butter
2 cups of granulated sugar
2 large eggs
2 teaspoons vanilla extract
4 teaspoons baking powder
4 cups of white flour
Filling: Apricot Preserves, Orange Marmalade, and Strawberry Preserves
 
Cut the butter the sugar. Blend thoroughly, add eggs and blend again. Add the flour – ½ cup at a time, blending it each time. Put the dough in the refrigerator overnight to chill. Roll the dough out to ¼ inch thick and cut circles with a cookie cutter with a 3-4 inch diameter (You can use the mouth of a glass also.) Put a tablespoon of filling in the middle of each circle. Fold up the three sides of the circle to make a triangle, overlapping the sides and allowing a little of the filling to show through in the middle. The cookies will look like little triangles - Haman's ears! Bake at 375 degrees for about 10-15 minutes until the cookies are golden brown.
